Creamy Dill Sauce

Decadent and smooth with the fresh taste of dill, this Creamy Dill Sauce elevates even the simplest of meals.


  • 1 C cashews

  • Juice of 1 lemon (about 4 tbsp)

  • Zest of 1/2 lemon

  • 1 tsp salt

  • 2 tbsp olive oil

  • 1/4 - 1/2 C water

  • 2 tbsp fresh dill, chopped (can use 3 tbsp if you want a stronger dill flavor)


  1. Soak cashews for 1 hour in just boiling water or for at least 6 hours in room temp water

  2. Drain cashews and add to blender with all other ingredients, but only using 1/4 C water

  3. Add more water 1 tbsp at a time until it reaches a good consistency - if you use a blender, you may not need as much water as you would in a food processor

Drizzle on grain bowls, salads, or roasted veggies, or use as a spread on a sandwich or wrap.
